Cathy builds on a lifetime of work in Polk County’s school system and now shares the message of a long, healthful life supported by plant based diet and healthful lifestyle choices. When not busy spreading the joy of well-being with “more plants on the plate,” Cathy loves exercise-running, walking, swimming, biking, yoga and Pilates. Pre-COVID she and her husband combined these activities with travel.
