Peanut Butter Chocolate Quinoa Breakfast Parfait

Recipe By Simply Quinoa


• 4 TBSP - chia seeds

• 1 scoop - protein powder of choice (optional)

• 2 TBSP - raw cacao powder or unsweetened cocoa powder

• 1 C - milk of choice

• 3 TBSP - creamy peanut butter

• 1 TBSP - maple syrup or honey

• 2-3 TBSP - water

• 1 C - cooked quinoa

• Toppings of choice


  1. Whisk the chia seeds, protein powder, cacao and milk together and refrigerator overnight

  2. Next day, place chia pudding into small glass jars, filling approximately halfway (depending on size of jar)

  3. Mix peanut butter, honey or maple syrup and water until smoothie and place approximately a ½ inch layer in each jar on top of chia pudding

  4. Add ½ C quinoa to each jar on top of peanut butter layer

  5. Sprinkle with topping of choice. Suggestions: fresh berries, dark chocolate chips, unsweetened coconut flakes
